Maple Glazed Petite Filet with Caramelized Peppers and Onions atop Baguette














1 Large Sweet Yellow Onion

1 Large Green Pepper

2 Petite Filets cut into small pieces

1 Loaf of French Bread

1/2 Cups of Blue Cheese

2 Slices of Bacon (chopped)

2 Tablespoons of Brown Sugar

1 Teaspoon of Oil

1/4 Cup of Roasted Red Peppers (chopped)

1/4 Cup of Balsamic Vinegar

3/4 Cup of Good Quality Maple Syrup

1 Teaspoon of Cajun Seasoning

1/2 Cup of Lager (Beer)

1/4 Teaspoon of Salt

1/4 Teaspoon of Pepper

1 Teaspoon of Garlic Pepper (see picture)



First take the Filet and cut diagonally into bite size pieces.  Take the Maple Syrup and put into a large bowl along with the Filet pieces.  Add the salt and pepper.

Take a pan, heat it up and add the bacon.  Then you add the peppers and onions which are chopped into small pieces.  Cook until soft, add the vinegar, brown sugar and beer. Add the Roasted Red Peppers that you cut into small pieces. Cook down and add the garlic pepper.  Let cook for about 20 minutes while stirring occasionally. 

Take a bake pan and put the sliced pieces of French Bread on it.  Add some Olive Oil to each piece along with a sprinkle of Cajun Seasoning. Put this into a 425  degree oven, cook for about 8 minutes or until the top is brown. 

Take the bread out and set aside.  Turn off the pepper mix. Take a pan and heat it, add the entire mixture of Filet with the Maple Syrup. Cook until the way you desire your steak, get tongs and take them out piece by piece and place them on a plate. 

To assemble, you take a piece of the bread add the steak and then the pepper/onion mixture.  Take some of the Blue Cheese and sprinkle on top of each piece.  Enjoy!
