Ingredients for 2 pies:
- 2 cooking pumpkins (average size)
- 1 cup of brown sugar
- 4 teaspoons of pumpkin spice
- 2 teaspoons of maple sugar
- 1 teaspoon of ground cloves
- 1 teaspoon of nutmeg
- 1 teaspoon ginger
- 14 ounce can of sweetened condensed milk
- 2 eggs
- 2 prepared pie crusts (I’m using frozen shells today)
The first thing you do is take the pumpkins and place them on a large baking sheet put them in a 200 degree oven for 2 hours, take out of oven and cool for about an hour before you cut it open and scoop the insides out.
Cut the pumpkin in half, take out all of the seeds but be very careful not to scoop all the pumpkin along with it, once seeded scoop out the soft flesh into a food processor, make into a soft puree, takes about 3 minutes.
Put this mixture in a bowl and the remainder of the ingredients, either by hand or with a mixer on low combine the ingredients together.
Take your prepared pie shells and fill almost to the top of each shell, place on a cookie sheet in case of overflow. Cook for about 90 minutes in a 350 degree oven, you can tell if it is done when you stick a knife inside of it and it comes back clean.
