Sheppard’s Pie

Ingredients:

  • 2 pounds of ground lamb (you can use 90/10 ground beef instead)
  • 2 teaspoons of olive oil
  • 1 green pepper diced
  • 1 sweet onion diced
  • 1 carrot chopped
  • 1 teaspoon of bacon fat (I always drain my bacon and keep the fat in a container for other recipes)
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 1 teaspoon of cumin
  • 1 tablespoon of honey
  • 1 teaspoon of cinnamon
  • 1 teaspoon of pumpkin spice
  • 1 teaspoon of nutmeg
  • 1 teaspoon of allspice
  • 1 small can of tomato paste
  • 2 cups of chicken stock
  • 1 teaspoon of cloves
  • 1 teaspoon of chili powder
  • 1 teaspoon of Hungarian paprika
  • 1 bag frozen peas
  • 1 bag frozen corn

 

FOR POTATOES:

  • 5-6 red potatoes
  • 2 teaspoons of salt (1 for boiling water and 1 for when mixing)
  • 1 teaspoon black pepper
  • 1 cup sour cream
  • 1/2 cup milk 
  • 1/4 cup of heavy cream
  • 1/2 stick butter for the top of potatoes

 

 

HOW TO:

First get the potatoes started, cut them in small chunks and add them to water with a teaspoon of salt.  Boil them for about 35-40 minutes until tender.

In the mean time in a large pan with the oil and bacon fat, take the pepper, onion and the carrots and cook for about 15 minutes on medium heat. Add all the seasoning to the pan and cook for another 5 minutes add the beef. 

Cook for about 10 more minutes and then add the broth and the tomato paste, let the broth cook off for about 5 minutes and add the frozen peas and corn In the mixture.  Set aside.

When the potatoes are done cooking drain and add back to the pan.  Take the sour cream, milk and heavy cream along with the salt and pepper to the pot.  Mix with a mixer until smooth. 

Now get a large baking dish and add the meat mixture to the pan, add the potatoes and spread them out.  Take the butter and cut into little square pats spread this across the potatoes.

Cook this in a 400 degree oven for about 30 minutes, the top will be crisp.  spoon out and enjoy!
