- 3 -4 lb pork roast
- 2 packs of Sazon
- 2 teaspoons of Hungarian Paprika
- 1 teaspoon of kosher salt
- 1 teaspoon of black pepper
- 1 bottle of beer
- 1 cup of Sofrito
- 8 large tortilla shells (I use large jalapeno ones)
- 2 cups of cheddar cheese (can use any cheese)
- 1 teaspoon olive oil for pan
- 1 sweet onion chopped
- 1 red pepper chopped
- 1 jalapeno pepper chopped
- 1 teaspoon of cumin
- 1 can of black beans
- 2 ears of corn off the cob (can use a package of frozen corn)
- salsa (for garnish)
- sour cream (for garnish)
Take the Pork and put in a crockpot along with the Sazon, Paprika, salt and pepper, beer and sofrito ( sofrito goes on the top of the roast) Let this cook on low for 7 -8 hours.
When this is done you take the pork out and rest a few minutes, then take two forks and pull apart the roast. Take this and put it back into the juices until you are ready to assemble.
Now in a saucepan take the oil, onions, peppers, cumin and sauté for about 4 minutes, add the cumin, black beans and the corn cook for another 3 -4 minutes put this aside.
Take a large pan that will hold the tortilla and heat it on medium heat. Take one of the tortillas and place it in the pan, next take some of the cheddar and place it on the open shell, next take the onion mixture and place on top, you then take some of the pork and place that on top as well. Take a little more of the cheddar and place on top of it all, take another tortilla and place on the top of that. You then let cook on one side for about 2 minutes, you can check you should see it getting brown and crisp. With a super large spatula, carefully flip this over for another 2 minutes. Take off heat place on a large plate and cut in fours, repeat this process you should et about 4 large Quesadilla’s out of this, Serve with sour cream and your favorite salsa. Enjoy!!!
