Baked Mac and Cheese with Bacon

  •        2lbs of macaroni
  •        1 stick of butter
  •        3/4 cup of flour
  •         3  tablespoon of dry mustard powder
  •         11  cups of milk
  •         1 sweet onion chopped very well
  •          2 bay leafs
  •          2 teaspoons of paprika
  •          1 teaspoon of nutmeg
  •          1/2 teaspoon of cayenne pepper
  •          2 large eggs
  •         24 ounces of sharp white cheddar cheese (shredded)
  •         12 ounces of gruyere cheese (shredded)
  •          4 ounces parmesan cheese (good cheese not powdery)
  •          1/2 lb bacon cooked and chopped
  •          1 1/2 tablespoons of salt
  •           1 tablespoon of pepper
  •           2 cup of bread crumbs
  •           1 stick of butter


Preheat oven to 350 degrees . In a large pot boil water, salt the water and cook the pasta to al dente. While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep whisking for about five minutes making sure it’s not lumpy. Stir in the milk, onion, bay leaf,  paprika, cayenne pepper and the nutmeg. Simmer for ten minutes and remove the bay leaves. Temper in the eggs. Stir in 3/4 of the cheese. Season with salt and pepper. Add the bacon.  Fold the macaroni into the mix and pour into a casserole dish. Top with remaining cheese. For the topping, melt the butter in a sauté pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 45 minutes to an hour. Remove from oven and rest for five minutes before serving
