Chinese Chicken and Broccoli











3 boneless chicken breasts

2 heads of broccoli crowns

1 carrot sliced (I use a peeler to slice of pieces)

2 tablespoons of vegetable oil

1/4 cup water


1 teaspoon of baking soda

2 teaspoons of sugar

4 teaspoons of cornstarch

2 tablespoon of soy sauce

2 tablespoons of water

4 tablespoons of vegetable oil



1/2 teaspoon of fresh ginger

1/2 cup and 2 tablespoons of Soy Sauce

4 tablespoons of brown sugar

8 cloves of garlic

4 tablespoons of flour

2 tablespoons of rice vinegar

2 tablespoons of vegetable oil

2 tablespoons of water

1 teaspoon of Simply Asia Ginger Garlic Seasoning

1 teaspoon of honey


Fist take the broccoli and carrots and steam them for about 6 minutes until soft (I have a steamer but you can do in microwave or in a pot of water) put aside.

Take the chicken and cut it up in small slices, just like the restaurants do. 

Make the marinade, put chicken in it and let sit while you are doing the other steps.

Now, take the garlic and the ginger and put it in a food processor, pulse a few times.  Take the rest of ingredients for sauce and add in processor, pulse a few more times.  Set this aside.

Take out either a Wok or a large pan, heat up the oil.  Add the chicken into the pan, add about half of the sauce, and then once it is almost cooked all the way through add the broccoli and the carrots.  Cook until chicken is done add the sauce and toss around, now start adding the water, it takes the drippings off of the pan and it loosens the sauce a little. 

I serve this with some brown rice, either on the side or put the chicken on the top of it. Follow package instructions for rice.
