Cajun Brown Sugar Salmon with Bacon Wrapped Parmesan Asparagus

1 Large Piece of Salmon

1/2 Cup of Brown Sugar

3 Teaspoons of Cajun Seasoning

2 Teaspoons of Ground Black Pepper

2 Teaspoons of Olive Oil

For Asparagus:

1 Bunch of Cleaned and Cut Asparagus

1 Piece of Bacon for Every 3-4 Asparagus Strands

1/2 Cup of Fresh Parmesan Cheese

Olive Oil


Take the Salmon and put it on a large sheet pan lined with aluminum Foil.  Take some of the Olive Oil and spread across the fish.

In a small bowl, take the brown sugar, cajun seasoning, black pepper and mix well.  Take this and rub it into the fish.  Put another piece of foil on top to prevent from burning.  Place in a 300 degree oven for about 35-40 minutes. 

To make the asparagus you first clean and snap off the ends of the asparagus.  Put aside, take the bacon put on a cookie sheet and par bake so that it is cooked almost threw but still able to bend it around. Take the asparagus and wrap it with a slice of bacon and place on top of a foil lined baking sheet.  Place a sprinkle of olive oil across them and then sprinkle the parmesan cheese on top of all the asparagus. Place a foil sheet that you spray with a-non sick spray and place it in the oven along with the fish. 

Take it out of the oven, slice up the fish and serve with the asparagus.  ENJOY!
